We are an artisanal bakery café based in NYC founded by the same team behind our company, the award winning bread bakery that has been supplying Michelin-starred restaurants and top hotels for more than 25 years. Since our start, we have grown from supplying bread to Manhattan and Boston’s culinary maestros to rapidly expanding our own retail cafés. In the process of creating food that we are proud of we found our home. Our decision to enter retail in 2012 and create Café d’Avignon always stemmed from our desire to form community–to bring people together through the beauty of baking and move the magic of bread into everyday life. Everything we ate was local and seasonal, coming from the farms, villages, and wheat fields just a few miles away from the city we grew up in. For us, this was never a business philosophy, it was simply who we are and where we came from. This is why our menu is simple and honest, rooted in the elegant but explosive concerto of breadmaking. About the Position
The Pastry Manager need to meet the daily production goals for baked goods. Pastry Manager should know how to follow and adjust recipes provided, Schedule and manage the team (6-8 people) and ensure that the products produced in the bakery meet our quality standards while maintaining a clean and sanitary food area.
  • Follow production schedule to make and bake the variety and quantity of goods needed
  • Manage the team (Schedules, Directives)
  • Measure ingredients to mix croissant doughs, fillings, cakes, scones, cookie dough according to recipes
  • Make butter blocks for lamination products
  • Roll, cut, and shape dough to form different viennoiserie pastries, breads, and related products timely and efficiently
  • Cut, peel, and prepare fruit/nuts for pastry fillings
  • Mix icings and other toppings to decorate pastries
  • Use a variety of kitchen tools, including sheeter, electric mixers, blenders, cutting tools, rolling pins, and pots/pans
  • Bake all pastries/breads to specification and establish a high standard of product quality
  • Troubleshoot variables that can affect the production process
  • Maintain safe, clean and good working order of production areas and equipment
  • Maintain clear and open communication with packing and sales teams
  • Assist with training of new members on all aspects of production
  • Handle and restock ingredients, tools, and cooking pans




Requirements

Requirements / Nice to Have
  • 3+ years of experience in bakery / pastry required
  • High School, vocational degree or equivalent in bakery or pastry preferred
  • Intermediate English required
  • Managerial Skills, Product Knowledge
